We propose you the recipe of a very traditional dish of Mugello: good appetite!
TORTELLI DI PATATE - POTATOES TORTELLOS
Ingredients for 4 persons:
- 200 gr. of potatoes
- parmigiano reggiano cheese
- 2 eggs
- pulp of pumpkin boiled
- some spoons of roast gravy (optional, but if there is the dish become more tasty!)
Ingredients for the paste:
- 500 gr. of flour
- 3 eggs
Recipe: Cook to vapor potatoes peeled and the pumpkin and passes all in the potato-masher. Join the cheese, the eggs, the gravy of roast and the salt. Then prepare the paste with the ingredients written above and make a soft ball of pasta, easy to manipulate. In case the eggs were not sufficient add another. Expert people use the mattarello in order to spread leaf through it uniform thin but it is possible to obtain good result using the machine that pull the paste. You obtain stripes of 5 cm approximately on which you will put small ball of filling, at regular distances then you cover with the border of the strip and separates them one by one. Finish up with the knife for paste, making attention to remove the air to the inside, otherwise cooking they risks to break off and to ruin their aspect. Leave them dry on a 'canovaccio'. Then boil them in salted water for some minutes.

Conservation: to freeze raw
